I feel like everyone has a “thing” they make that people request at family functions and potlucks.
“Make sure Aunt Susan brings her broccoli casserole,” or “I can’t wait to try Cousin Gina’s carrot cake!”
About two years ago, I realized I didn’t really have a “thing” and I became obsessed with finding my signature dish. My patient family sat through endless taste testings until I came up with the recipe below. It has loads of cheese, lots of bacon and sour cream. It’s like a recipe for heaven in your belly. Enjoy and let me know if you try it!
My famous bacon covered mac & cheese (well famous to me):
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- ½ c evaporated milk
- 2 large eggs lightly beaten
- ¼ c sour cream
- 1 tbsp Dijon mustard
- ½ tsp salt
- ¼ tsp cayenne pepper
- 1/3 c parmesan cheese
- 1 tbsp mayonnaise
- 6 strips cooked bacon
Cook the macaroni until it is al dente. Drain. In a bowl, add in eggs, sour cream, cayenne pepper, cheeses, mayonnaise, evaporated milk, mustard, salt, and pepper to taste. Bake at 350 degrees for 30 minutes.
Add bacon on top then broil for 2 minutes.
